Teff Peanut Butter Oatmeal Cookies

What you need
- 1/2 cup butter or margarine
- 1 cup packed brown sugar
- 1 egg
- 1/2 tsp. vanilla
- 1/2 cup smooth peanut butter
- 2 cups rolled oats
- 1/2 cup teff flour
- 1/2 tsp. xanthan gum
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 cup chopped peanuts
How to make it
- Cream butter and sugar together.
- Beat in egg.
- Add vanilla and peanut butter.
- Mix in remaining ingredients.
- Shape into small balls or drop by spoonfuls onto ungreased cookie sheet allowing room for expansion.
- Bake at 375 degrees for 12-15 minutes.
