Teff Banana Coconut Loaf

What you need
- 2 eggs
- 1 cup!white sugar
- 1/2 cup melted margarine
- 1 cup mashed bananas (3 medium very ripe)
- 1/2 tsp. vanilla
- 1 1/2 cups Teff flour
- 1 tsp xanthan gum
- 1/2 cup unsweetened coconut
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup chopped pecans
How to make it
- Break eggs in mixing bowl and beat until frothy.
- Add sugar and melted butter mixing well with eggs.
- Stir in mashed banana and vanilla.
- In another bowl mix all remaining dry ingredients.
- Pour over batter, stirring to combine.
- Put batter into a greased loaf pan.
- Bake at 350 degrees for 55-60 minutes.
- Let stand for 10 minutes then remove the loaf from the pan and finish cooling on a wire rack.
