Teff Country Corn Bread

What you need
- 1 cup yellow cornmeal
- 1/2 cup dark teff
- 1 tsp. xanthan gum
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 tbsp. baking powder
- 1 1/2 cups lactose-free milk
- 1 tbsp. white vinegar
- 1 egg, beaten
- 1/2 cup vegetable oil
How to make it
- Preheat oven to 450 degrees.
- Grease an 8" x 8" pan and place in oven until piping hot (about 3 minutes)
- Combine cornmeal, dark teff, xanthan gum, salt, baking soda baking powder. Mix thoroughly.
- Mix together milk and vinegar and let sit for one minute. Add all wet ingredients to the dry ingredients. Mix well.
- Pour batter into hot pan and bake at 450 for about 20 minutes or until golden brown.
