Teff Country Corn Bread Share

What you need

  • 1 cup yellow cornmeal
  • 1/2 cup dark teff
  • 1 tsp. xanthan gum
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tbsp. baking powder
  • 1 1/2 cups lactose-free milk
  • 1 tbsp. white vinegar
  • 1 egg, beaten
  • 1/2 cup vegetable oil

How to make it

  1. Preheat oven to 450 degrees.
  2. Grease an 8" x 8" pan and place in oven until piping hot (about 3 minutes)
  3. Combine cornmeal, dark teff, xanthan gum, salt, baking soda baking powder. Mix thoroughly.
  4. Mix together milk and vinegar and let sit for one minute. Add all wet ingredients to the dry ingredients. Mix well.
  5. Pour batter into hot pan and bake at 450 for about 20 minutes or until golden brown.
